Chow mein is a dish which is liked by most of the people from children to adults. Especially the spicy and spicy chow mein found on the roadside has a different taste. Cabbage – half

White vinegar – 1 teaspoon
Red chutney – 1 teaspoon

How to make street style chow mein
First of all, heat water in a vessel. Add some salt and oil and boil the noodles. Instead of cooking the noodles completely, cook them only about 70 to 80 percent. After this, filter them and keep them aside, so that excess water gets removed.
Now heat the pan on high flame and add oil in it. When the oil is hot, add finely chopped garlic and onion and fry lightly. After this add lengthwise chopped carrots, capsicum, cabbage and green chillies.
Cook the vegetables on high flame while stirring continuously. They should not be softened too much, because the slight crunch of the vegetables in chow mein improves the taste. Now add salt, red chilli powder and black pepper and mix well.
After this, add boiled noodles to the pan and toss well with the vegetables. Pour soy sauce, white vinegar and red sauce over noodles. Mix everything well and cook on high flame.
Stir the noodles continuously for a few minutes. Cooking on high flame can give a slight smoky flavor to chow mein. After the sauce and spices are mixed well, turn off the gas and serve hot chow mein.
Keep these things in mind while making chow mein
- To improve the taste and texture of chow mein, do not overboil the noodles. Overcooked noodles may become sticky and soft after being added to the pan.
- Always try to cook chow mein on high flame. Overcooking the vegetables can cause them to lose their crunch and also affect the taste of the chow mein.
- Adding too many noodles to the pan at once can also cause chow mein to become soggy. If the quantity is large then it would be better to make it in two parts.
- Another important thing is to mix the sauce and vinegar after adding the noodles. This allows the noodles to be tossed well with oil and vegetables first and then coated with the sauce to enhance the taste.
