Special Amba Poli is made from Hapus mango.

Although mango is called the king of fruits, but Hapus i.e. Alphonso mango of Valsad is considered to be the most special. Its price ranges from Rs 1200 to Rs 1500 per kg and its taste is also different from other mangoes. This is the reason why its demand is very high even in foreign countries. However, you can use any kind of mango to make Amba Poli.

Ingredients to make Amba Poli

  • desi ghee
  • Semolina
  • Mango Puree
  • nutmeg powder
  • green cardamom powder
  • Sugar
  • milk powder
  • wheat flour
  • Salt
  • Turmeric
  • Water

How to make Amba Poli step by step

1. First of all, heat desi ghee in a pan, add semolina and fry until it becomes light golden. After this add mango puree, nutmeg powder and green cardamom powder and mix well.

2. After cooking for a few minutes, add sugar to it and keep cooking until the mixture thickens. Then add milk powder to it and stir for some time and keep it aside to cool.

3. Now add salt, turmeric and desi ghee to wheat flour and knead the dough. Put this flour in water in a bowl and keep it soaked for about an hour. After the stipulated time, take out the dough from water and knead it again with light hands, so that it does not tear while rolling the roti.

4. After this, make small balls of the dough, fill the prepared mango stuffing in it and roll it gently to give it the shape of a roti. Now apply desi ghee on both sides and cook it well on a hot pan.
