Material

  • 8–10 mutton chops (about 750 g)
  • 1/2 cup thick curd
  • 2 tbsp ginger-garlic paste
  • 1 tablespoon of red chillies
  • 1 tbsp Kashmiri Red Chilli
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 1 tsp black pepper powder
  • 1 tablespoon lemon juice
  • 2 tbsp roasted gram flour
  • 1 tablespoon rice flour or cornflour
  • Salt to taste
  • 2–3 tbsp oil or ghee
  • Onion slices for garnish
  • Lemon slices
  • Finely chopped coriander
  • Green Chutney (for serving)

  • Wash the mutton chops and drain the excess water completely. A light cut on the chop will infuse the masala inside.
  • In a large bowl, add curd, ginger-garlic paste, red chillies, Kashmiri chillies, turmeric, coriander powder, cumin powder, hot
  • Prepare a smooth marination by mixing masala, black pepper powder, lemon juice, gram flour, rice flour and salt.
  • Apply this marination to the mutton chops well on all sides and refrigerate for at least 4 hours or overnight if possible.
  • Cook the minced mutton in a pressure cooker with little water for 3 to 4 whistles. The mutton should be soft,
