Material

Sweet corn-2 cups (boiled or grated)
Gram flour-1/2 cup
Rice flour-2 tbsp (for more crispness)
Green chilli-1-2 (finely chopped)
Ginger-1 tsp (grated)
Green Coriander – 2 tbsp (finely chopped)
Red chilli powder-1/2 tsp
Turmeric-1/2 tsp
Cumin-1/2 tsp
Garam Masala – 1/2 tsp
Salt – as per taste
oil for frying

Method

1- Lightly mash the boiled corn in a large vessel. Leave some grains whole, this will improve the taste and texture of the pakodas.
2- Add gram flour, rice flour, green chilli, ginger, green coriander, red chilli powder, turmeric, cumin, garam masala and salt and mix well.
3-If the mixture seems too dry then add 1-2 tablespoons of water. Keep in mind that the solution remains thick. Heat oil in a pan on medium flame.
4- Take the prepared mixture in small portions and put it in oil and fry till it becomes golden and crisp. Take out the pakodas and keep them on tissue paper so that the excess oil gets removed.
5-Serve ready pakodas with coriander chutney, tamarind chutney or tomato sauce. If you have a cup of hot tea or coffee along with it, your evening breakfast will become even more delicious.
