Since I’m the dietitian of the group, my family and friends always request that I prepare some sort of salad or veggie dish for our summer events. When sitting next to delicious dips and grilled burgers, vegetable sides are often overlooked, but I love the challenge of making these nutritious dishes shine. And thanks to seasonal produce, bringing a mouthwatering, plant-forward dish to the barbecue is a breeze. That’s why this No-Cook White Bean Spinach Caprese Salad is going to be my go-to all summer long. Fresh ingredients like basil, spinach and sweet cherry tomatoes are paired with creamy white beans and fresh mozzarella for a refreshing and crowd-pleasing potluck contribution.

It’s Easy to Prepare

During the hottest months of the year, I want to keep my oven and stove use to a minimum. This no-fuss salad requires zero cooking and comes together in just 10 minutes. It also only uses one bowl, which makes cleaning up a breeze. Plus, many of the ingredients are pantry staples, so you might already have them on hand.

It’s Nutrient-Packed

Each serving provides 15 grams of protein and 7 grams of fiber, the perfect combination for increasing fullness and satisfaction. Meeting your protein needs is important for overall health and well-being, as it is essential for maintaining and building muscle, hormone regulation, growth and tissue repair.

Consuming whole foods like beans, which are rich in plant-based protein and fiber, supports both heart and digestive health. Since most people don’t get enough fiber each day, this salad is an easy and delicious way to help close that gap—giving you more than 25% of your daily fiber needs in just one serving.

It’s Extremely Versatile

This salad is also easy to customize so you can use more of what you have on hand or accommodate different flavor preferences. In the past, to make a heartier salad, I’ve added whole-grain farro. Its pleasantly chewy texture gives the salad a nice bite that doesn’t get mushy in the refrigerator. With an additional 6 grams of protein and 4 grams of fiber per ¾-cup serving, it turns this salad from a side dish to an entree. I have also enjoyed adding additional vegetables I have on hand, like grilled artichokes, red onion or roasted peppers. If you’re not a fan of spinach, use other popular greens like chopped kale, arugula or mixed greens.

The dressing calls for a simple combination of heart-healthy extra-virgin olive oil, sweet balsamic vinegar and Dijon mustard. For an extra boost of umami, you can also add minced garlic or shallot. While my husband could drink balsamic vinegar, it might not be everyone’s cup of tea, so you can swap it out for the vinegar of your choice. Red-wine vinegar would work well if you are looking to reduce the sweetness but maintain that tangy vinegar flavor.

My favorite ingredient in this dish is the fragrant, fresh basil. My father-in-law grows basil at home, so I always have a fresh stash ready to go. If you don’t like basil, use alternative herbs of your choice like oregano, parsley or thyme; chop them up as a garnish on top or include them in your dressing. Herbs are a delicious way to add nutrition and flavor without additional sodium.

Once the salad is dressed, serve it right away to prevent the spinach from wilting. If you are attending a buffet-style potluck, serve the dressing on the side to keep your spinach crisp. Make it your own and enjoy it with company, perhaps with a crunchy chunk of toasted baguette or sourdough.
