How to make Bihari style tomato chokha?

First of all, wash the tomatoes thoroughly and cut them into big pieces. Finely chop onion and green chilli and keep aside. Chop the garlic cloves also finely.

Now place a pan on the gas and heat mustard oil in it. When the oil is hot, add dry red chillies and fry for about a minute. After this add finely chopped garlic and cook until it becomes light golden. Take care that the garlic does not burn, otherwise the taste may become bitter.

Now add cumin seeds in the pan and let it crackle. After this, add finely chopped onion and fry until it turns golden. Also add chopped green chillies to it.

Once onions are fried, add chopped tomatoes. Add salt as per taste and cover the pan and let it cook on low flame. Keep stirring occasionally, so that the tomatoes do not stick to the pan.

When the tomatoes become completely soft and their water dries up to a great extent, then turn off the gas. Take out the prepared mixture in a plate. Add pre-roasted dry red chilli and garlic to it and mix it well.

Now mash everything well with the help of a masher or spoon. Add red chilli powder and salt as per requirement. Add finely chopped coriander and juice of half a lemon and mix well.
