Lucknow/Greater Noida: Read- On Saturday, Uttar Pradesh International Trade Show-2026 was decorated with such a flavor of UP that the feet of the people who came to visit the trade show stopped at the ODOC pavilion. People are enjoying the taste of traditional dishes and local food products from different districts of the state in the One District One Cuisine Pavilion built at India Expo Center and Mart. Not only are the dishes being served here, but the tradition behind them and the story of the local products is also being told.
The Master Chef Class at ODOC Pavilion was a special attraction on Saturday. Here, the method of preparing the traditional dish of Purvanchal Thekua with jaggery of Mirzapur was shown live to the visitors. The experts explained the process from selection of ingredients to preparation of mixture, shaping and cooking. Visitors also interacted directly with the chef and asked questions related to Thekua and other traditional flavors of Purvanchal.
The use of Mirzapur's jaggery remains a special attraction in the Master Chef class. This is not only introducing visitors to the traditional flavors of Thekua, but also showing how local agricultural and food products form part of a region's culinary identity. The initiative focuses on combining local culture and products with taste.
Famous chef Harpal Singh Sokhi will be present in the Master Chef class on Sunday. He will show the visitors the intricacies of combining the traditional dishes of Uttar Pradesh and local food products with modern cooking. Over the next four days, many other renowned chefs will also join the classes and share their experiences with the visitors.
'Demand for products increased with flavors in 'Khau Gali'
'Khau Gali' of ODOC Pavilion also remains a center of attraction for visitors. Crowds are continuously gathering here to taste the traditional dishes and food products of different regions of the state. Along with live feed, demand for many local products is also seeing a rise. Along with tasting, people are also getting information about the respective districts and the products prepared there.
Tastes of 75 districts under one roof
In the ODOC Pavilion, the food heritage of all 75 districts of the state has been presented on one platform. The diverse culinary tradition of the state is being brought to the fore through the sweetness of Braj, flavors of Awadh, specialty of Bundelkhand, traditional taste of Western Uttar Pradesh and cuisine of Purvanchal. Different dishes are presented in relation to their local and cultural context.
Effort to bring local taste to the global market
ODOC Pavilion at the international platform of UP International Trade Show is connecting local food products and traditional cuisines with the visitors from India and abroad. The aim of the initiative is to give a new identity to the culinary heritage of the state and also to provide a wider market to the local products. The traditional flavors of UP are coming here as a new introduction for the foreign buyers and other visitors coming to the trade show.
