Varai or Bhagar – 1 cup
Sago – Pav cup
Curd – 1 cup,
Boiled potato – 1 medium, mash well
Green Chillies – 2 to 3, finely chopped or crushed
Cumin – 1 tsp
Eno or baking soda – half a spoon
Fasting salt – to taste
Oil – for frying the appe

First step – soaking
First, combine the varai and sago and wash it two-three times. Then put water in a bowl and keep it soaked for 3 to 4 hours. The sago should swell.
Step Two – Sharing
After 4 hours, remove all the water from it. Now put this mixture in the mixer. Do not add too much water. Add some curd and spread it thickly. Do not make very fine paste, keep it a bit thick so that the appe becomes crispy.

Step 3 – Preparing the mixture
Now take this felt mixture in a big bowl. Add mashed potato to it. Add curd, green chillies, cumin seeds and salt. Mix everything well by hand. If the mixture seems too thick, add a little more curd. It should be like idli batter.
Step 4 – Add soda
Now the most important thing. Add half a teaspoon of ino or soda only when you want to make the appe and mix gently in one direction. Don't intrude too much. After adding soda, the dough will rise.

Step 5 – Roast the appe
Now keep the appepatra on the gas. Once hot, pour a little oil into each hole. Once the oil is hot, spoon the batter into each hole. Don't fill it full, only half full as it will swell. Now cover it and let it cook on medium flame for 3-4 minutes. When the underside is golden, turn it over with a spoon or fork. Roast the other side too. When it turns red and crispy on both sides, remove it. Done, your hot fasting appa is ready. You can eat this appe with peanut chutney. It tastes very heavy with coconut chutney.
