- Boiled potatoes – 4-5 (medium sized)
- Oil – 2 tbsp
- Mustard – 1/2 tsp
- Cumin – 1/2 tsp
- Curry leaves – 8-10
- Green chilli – 2 (chopped)
- Ginger – 1 tsp (grated)
- Turmeric powder – 1/4 tsp
- Red chilli powder – 1/2 tsp
- Coriander powder – 1 tsp
- Jaggery – 2 tbsp
- Tamarind water or lemon juice – 1-2 tsp
- Salt – as per taste
- Water – 1 cup
- Green Coriander – for garnish

Gujarati style sweet and sour potato curry is easy to make. For this, first of all peel the boiled potatoes and cut them into medium sized pieces. If you want, you can also mash them a little, so that the gravy gets a good texture.
Now heat oil in a pan. Add mustard seeds and let it crackle. Then add cumin, curry leaves and green chillies and fry until aroma comes out. After this add ginger and cook lightly.

Now add turmeric, red chilli and coriander powder to it. Mix the spices well and fry for 1-2 minutes, so that their flavors come out.
Now add chopped potatoes to it and mix well. Then add jaggery and tamarind water or lemon juice. After this, add water and let the vegetable cook on low flame for 5-7 minutes.
When the vegetable becomes slightly thick, add green coriander on top and turn off the gas. Your sweet and sour Gujarati potato curry is ready. Serve this vegetable with hot puri, paratha or phulka. Everyone will like its taste.
