Materials:

  • Eggplant
  • Red chillies
  • Turmeric
  • Lemon juice
  • salt
  • curry leaves
  • Amchur powder
  • Coriander-cumin powder
  • garam masala
  • Rice flour
  • semolina

Action:

  • To make sparkling eggplant slices, first, rinse the eggplant with water. Make round discs of the washed eggplants.
  • Add red chillies, turmeric, garam masala, coriander cumin powder, salt to taste, amchur powder, lemon juice and mix in a plate.
  • Add the cut eggplant slices to the prepared masala and apply the masala properly. After that keep the eggplant slices for some time.
  • Add rice flour and semolina to the plate and mix. After that, add salt and red chillies as per taste and mix all the mixture well.
  • Heat oil in a pan. Dip the eggplant slices in hot oil and fry them till they turn brown on both sides.
