Ingredients for making Makhana Kheer
- Makhana – 2 cups
- Full cream milk – 1 liter
- Desi Ghee – 1 tbsp
- Sugar or jaggery powder – 4 to 5 tablespoons (as per taste)
- Cardamom powder – ½ tsp
- Almonds – 8 to 10 (chopped)
- Cashews – 8 to 10 (chopped)
- Pistachios – 8 to 10 (chopped)
- Saffron – a few threads (optional)
How to make Makhana Kheer
Step 1: Fry Makhana
First of all, heat desi ghee in a pan. Add makhana to it and fry on low flame for 5 to 7 minutes until it becomes slightly crisp. When it cools down, grind half the makhanas lightly and leave the rest whole. This improves both the taste and texture of kheer.
Step 2: Thicken the Milk
Boil milk in a heavy bottomed vessel. After boiling, cook it on low flame for 10 to 15 minutes while stirring continuously, so that the milk becomes slightly thick. This makes the taste of kheer more rich and creamy.
Step 3: Add Makhana
Now add roasted whole and coarse makhana in condensed milk. Let it cook on low flame for 8 to 10 minutes so that the makhana absorbs the flavor of the milk and becomes soft.
Step 4: Add sweetness and dry fruits
Now add sugar or jaggery powder to it. After this add cardamom powder, almonds, cashews, pistachios and saffron and cook for 3 to 5 minutes more. Once everything is mixed well, turn off the gas.
Step 5: Serve
The prepared Makhana Kheer can be served either hot or chilled in the refrigerator. Garnish by adding chopped dry fruits on top. People of all ages like its taste.
