Cooking over a hot stove in the summertime is less than ideal. To cut down on their time spent in the kitchen and maximize their time outside, many people turn to meal prepping. Thankfully, Costco has introduced the Kirkland Signature Chicken and Grain Protein Bowl with Sesame Dressinga nutritious summer meal that requires minimal prep and tastes great cold—no stove needed!
For protein, this bowl uses Kirkland Signature Rotisserie Chicken, shredded into bite-size pieces. It also provides quinoa and barley, two high-protein grains, plus cashews, roasted edamame and hard-boiled eggs. These protein-dense foods are all served over a bed of chopped romaine and spinach, then topped with pickled red cabbage and roasted sweet potatoes. To top off the nourishing dish, drizzle on the sesame dressing. You can find it in the refrigerated section, ready to enjoy.
The biggest draw for this meal is that each serving has 20 grams of protein. It is also loaded with fiber, with 6 grams per serving, which is 21% of your Daily Value. There is also 15% of the Daily Value for iron per serving, which is key for moving oxygen around the body and supporting muscle tissue. It also has a good amount of potassium, which is important for maintaining healthy bones. While one serving contains 17 grams of fat, only 3 of those grams are saturated, which means this meal is a great source of heart-healthy mono- and polyunsaturated fats.
According to the nutritional information, each package comes with 4 servings. This makes it an ideal purchase for a family meal or, as user Costcohotfinds shared on Instagramdividing one package into lunches for the workweek. Each container comes out to just under $20, for about $5 per serving. To meal prep, you can assemble each bowl in single-serving containers minus the dressing. Divide the dressing in four (or however many meals you’re making), and put the dressing in its own baggie or small container. When it’s time to eat, drizzle on the dressing, toss and enjoy.
Not only does this chicken and grain bowl taste great, but it’s also visually appealing, with a rainbow of colors and textures on display. Costco’s rotisserie chicken is always a win because they manage to infuse their meat with flavor without drying it out. The grains add texture, while the crunchy nuts and edamame contrast nicely with the velvety sweet potatoes, giving it a complexity that’s hard to beat.
Bottom Line
The Kirkland Signature Chicken and Grain Protein Bowl with Sesame Dressing is the perfect dish for summer meal prep. It contains Costco’s signature rotisserie chicken, grains like quinoa and barley, as well as colorful, nutrient-dense toppings like edamame and pickled red cabbage. At around $20 per container, it costs about $5 per serving and is a good source of protein, fiber and essential micronutrients like iron.
