First the ingredients for making Khawaja:
To make the dough –
1 cup of flour
2 tbsp desi ghee
Measured water

To make sugar syrup-
1 cup of sugar
1 cup of water
1/4 teaspoon cardamom powder

More materials
1.5 tbsp rice powder
1 tablespoon of desi ghee
1 teaspoon of rice flour for breading

method-
First mix 1 cup of flour with two tablespoons of ghee very well. Then mix water little by little and knead well to make a dough. Leave covered for twenty minutes.
Then make sugar syrup in a pan. Mix one cup of sugar with one cup of water and boil it. When it boils, add a little cardamom powder. When the water becomes a little thick, put a little juice between two fingers and see if there is chatchat sensation. See if there is a light thread from the middle between the two fingers! If it is seen then turn off the gas.

Back to the dough again. Knead it a little better and make it even. It will be about 5-7 lychees. Round all the lychees in the palm of your hand and roll them thinly like bread, filled with rice flour.

Now mix one and a half tablespoon of rice powder with ghee in a small bowl and make a thick mixture. Apply it on each bread with ghee or butter.

Take the rice flour mixed with ghee and spread it on each bread, one by one. Place one bread on top of the other. Take all together and roll like a snake. It means that all the breads are the same. Apply ghee to the face and squeeze well.
Now cut this roll into equal parts with a knife. Again that could be five to seven pieces. Take each piece in the same way as it is cut and gently roll it long. These rolled raw gajas should not be too thin or too thick.

Take all of them together and place them in a pan with oil and heat them. They will be fried in refined oil. After heating the oil in full flame, reduce the gas power and drop them one by one in the oil for frying. Fry until light red as much as possible. Meanwhile, heat the sugar syrup lightly and add the freshly fried gajas. Then when the juice is full, put it on a plate and offer it to God for Prasad.
