Stassi Schroeder Tells Us Her Go-To Summer Salad—Here’s How to Make It

The ‘Vanderpump’ star has a new show and a delicious summer menu on her hands.

After starring in the hit reality show Vanderpump Rules for eight seasons, Stassi Schroeder Clark is ready to tell her own story. The author, podcaster and former SUR server stars in House of Stassiher new Hulu show premiering at the end of July. As a trailer reveals, Vanderpump friends like Kristina Kelly and Katie Maloney will also appear in the show. There will be plenty of drama in tow—but Schroeder’s ready to handle it.

With years of reality television under her belt, Schroeder is no stranger to conflict. As she teams up with Popsicle for its Flavor Feud campaign this summer, we caught up with her to talk about what makes her new show feel different, the SUR menu items she still craves, her approach to wellness and her go-to summer salad.

What’s your go-to summer meal?

I’m a salad girly all year long. I actually just genuinely love salads. So, we just switch over to summer salads. Less hearty, more fruit. I love adding a berry vinaigrette, like a strawberry vinaigrette or a raspberry vinaigrette. Then add goat cheese, nuts, arugula—I’m an arugula girl; that’s my lettuce of choice. That’s probably my favorite summer meal, and always a lemon pasta. I can get down with a lemon pasta whenever.

What were your favorite menu items while working at SUR?

I was obsessed with the goat cheese balls—I still ride hard for goat cheese balls. They’re literally one of my top 5 favorite foods. Everything at SUR used to be so good. I haven’t been back in a while, and I know they’ve changed the menu because I get tagged in things all the time, but it used to be elite. Their chicken enchiladas were amazing, their crispy chicken, the fries, the crab cakes. Part of the fun of working at SUR was being able to be fed at SUR. You know, we were poor—we didn’t have that much money—so we would barely eat anything all day, and then just look forward to going to our shifts and getting a free meal.

How do you manage your mental health when engaging in drama is essential to your job?

Back when I was on Vanderpump RulesI don’t know that I was managing my mental health at all—I think I was going a little cuckoo. Now, with my show coming out, it’s different because it’s not a cast of coworkers. It’s my friends and family. It’s the actual people that I talk to every single day. To me, it felt more like therapy because when you’re on a reality show, you are forced to confront all your feelings. You’re forced to say them out loud. You can’t really sweep things under the rug.

You’re constantly having these conversations and working through your problems with your friends and your family or your partner. To me, it actually felt better for my mental health. That might sound insane, but I’ve been doing reality TV since I was 16, so it’s kind of what I know.

Do you have any wellness tips you can share?

My No. 1 wellness thing is knowing that I need alone time—that’s my ultimate form of self-care. I block out some time during the day to just be alone. I can’t even have my door open; otherwise, I feel the energy from the house. Other than that, drink a lot of water, get lymphatic drainage massages and try to get a lot of sleep. That’s like my thing. It can really be that simple. Everyone’s trying to make things so complicated and act like, in order to be healthy and the best version of ourselves, we need to buy all this stuff, do all these treatments, journal, go to Pilates—all of that. You kind of just need to drink your water and [rest].

Besides cherry popsicles, did you have any other favorite summer treats growing up in New Orleans, like snowballs?

You know about snowballs? Oh my God! I feel like New Orleans is the epicenter for snowballs. Yeah, no, snowballs were a huge part of my life. God, that feels good to talk about. Like I haven’t talked about snowballs in forever. I loved getting the wedding cake [flavor]and adding cream to it, cream and almond. Oh my God, I love a nostalgic cold sweet treat.

If you could invent a new popsicle flavor, what would it be?

Cherry-almond. I love almond-flavored things. You know, almond cookies, all that. Add a little almond flavoring, a little cream, and you’ve got a Milky Cherry Almond Delight. That would be my flavor.
