The month of Sawan is approaching, and during this time Shiva devotees observe fast. Eating the same type of fruits during the fast can lead to boredom. But now you don’t need to worry. This time you can make Arabic kebabs at your home. Not only are they prepared quickly, but they also taste amazing. In this article we will tell you the method of making this dish.


Material

– Arbi – 250 grams (boiled)

– Buckwheat or water chestnut flour – 2-3 tablespoons

– Green chilli – 1-2

Ginger – 1 tsp (grated)

– Green coriander – 2 teaspoons (finely chopped)

– Roasted cumin powder – 1/2 tsp

– Dry mango powder or lemon juice – 1/2 tsp

– Rock salt – as per taste

– Black pepper powder – 1/2 tsp

– Oil or ghee – for frying

How to make Arabi Kebab

1. First of all, boil the arbi in a pressure cooker or steamer. After cooking, peel it and apply a little oil and mash it well. Take care that there are no lumps.

2. Now, add green chilli, ginger, green coriander, roasted cumin powder, dry mango powder or lemon juice, black pepper and rock salt to the mashed arbi and mix well.

3. Add buckwheat flour, water chestnut flour or arrowroot to the mixture for binding and crispiness and mix well.

This is the most important step. Apply some oil or ghee on your hands and take small portions of the mixture and shape them into round tikkis or kebabs. Keep in mind to press it lightly, otherwise there is a risk of it breaking.

When all the kebabs are ready, place the pan on the gas and add 2-3 tablespoons of oil or ghee and heat it. Then place the kebabs one by one in the pan and shallow fry on low flame.

When the kebabs become golden and crispy on one side, turn them and cook until crispy. Fry all the kebabs using the same process.

Serve these kebabs with curd, green chutney and tea. If you like less spicy, you can also eat it with red chutney.

– Peel and mash the boiled arbi only after it cools completely, otherwise it may become sticky.

To make the kebab smooth, you can also mash it with a masher or a fork.
