Garam Masala recipe
First of all clean all the whole spices thoroughly so that no dust or grit remains.
Then heat a kadai or pan on low flame. First add cinnamon, black cardamom, fennel and bay leaves and saute for 1 minute. Then, add coriander, cumin, black pepper, cloves and cardamom.
After that turn off the flame and immediately add nutmeg powder and cloves and stir. Remove the spices to a wide plate and let it cool completely. Never grind hot spices, as this causes the oil to evaporate.
Add the cooled spices to the mixing bowl. Instead of grinding continuously, use pulse mode and grind intermittently to avoid overheating. Then store it in an airtight container.
