Tips to keep potatoes fresh: Potato is one of the most commonly used vegetables in Indian kitchen. It is used in snacks, vegetables and various dishes. Many people keep potatoes peeled and cut beforehand, but after some time their color turns black or brown. However, a change in color does not mean that the potatoes have gone bad.
Why does the color of cut potatoes change?
When cut potatoes come in contact with air, the process of oxidation begins. The elements present in potatoes combine with oxygen and turn the color brown. This process becomes more pronounced the longer they are exposed, but does not have a major impact on the taste or texture of the potatoes.
Do not keep cut potatoes open for too long
Avoid pre-cut potatoes. The best way is to chop them just before cooking. The longer the cut potatoes remain in the air, the faster the oxidation will occur.

If it is necessary to pre-cut the potatoes, soak them in cold water. This reduces the potato's contact with air and slows down the process of color change. Do not use hot water, as it may affect the starch present in the potatoes.

Adding some lemon juice to cold water may also help. Lemon is acidic and lowers the pH of water, which can slow oxidation. If lemon is not available, a small amount of white vinegar can also be used.
Store in ziplock bag
Use a ziplock bag to protect the cut potatoes from air. Put the potatoes in the bag and close it well and remove the excess air inside. This can slow down the oxidation process and keep the potatoes looking fresher for longer.
