Lifestlye Desk:- There is a tradition of offering modak and sweets to Ganpati Bappa. If this time you want to make something different and tasty for Bappa, then Gulab Barfi can be a good option. This barfi with the fragrance and sweetness of rose looks very attractive and can be prepared easily at home. The special thing is that not many ingredients are required to make it. So let us know what things will be required to make Gulab Barfi at home and what is the easy way to make it.
Material
Mawa/Khoya – 250 grams
Powdered sugar – 100 grams
Rose petals – 2 tbsp
Rose extract or rose water – 1 tsp
Cardamom powder – ½ tsp
Milk – 2 tbsp
Ghee – 1 tsp
Chopped pistachios – 1 tablespoon
Chopped almonds – 1 tablespoon
Dry rose petals – to garnish

Method
1-First of all, take a heavy bottomed pan and add one teaspoon ghee in it. Now add mawa to it and fry it on low flame while stirring continuously.
2-Do not brown the mawa too much. When its rawness goes away and it becomes slightly soft and starts giving off aroma, then slow down the gas.
3- There is a risk of the mawa sticking or burning when roasted on high flame, hence keep stirring continuously during this time.
4-Now add milk to the mawa and mix well. After this add rose petals and rose water. If you have rose extract, you can also use a small amount of it.
5- Keep in mind that do not add too much rose water, otherwise the taste of barfi may become strong.
Now add cardamom powder and mix everything well.
6-Now keep the gas on low and add powdered sugar into it. The mixture may become loose for a while after adding the sugar. Cook it while stirring continuously until the mixture thickens and starts leaving the pan.
7- When the mixture starts gathering at one place and its consistency becomes suitable for making barfi, then turn off the gas.
8- Apply light ghee on a plate or tray and grease it. Now add the prepared mixture into it and spread it evenly with the help of a spoon or spatula.
9-Add chopped pistachios, almonds and dry rose petals on top. Press lightly so that the dry fruits stick well to the barfi.
10-Now let it cool for some time at room temperature. After this, you can keep it in the refrigerator for about 30-60 minutes. After setting, cut pieces of desired shape with a knife.
Keep these things in mind while making barfi
To make rose barfi taste good, do not use too much quantity of rose water or rose extract. Do not fry the mawa on high flame and after adding sugar, keep stirring the mixture continuously. If the mixture seems too dry then some milk can be added. If the mixture becomes too soft then cook it on low flame for some more time.
In this way, rose scent and flavored barfi can be easily prepared at home. Along with offering it to Ganpati Bappa, it can also be served as Prasad. Using dry rose petals and pistachios for decoration will make the barfi look beautiful.
