Material
to make muthiya
- Grated bottle gourd: 2 cups
- Wheat flour: 1 cup
- Gram flour: 1/2 cup
- Semolina: 1/4 cup
- Ginger-green chilli paste: 1 tbsp
- Turmeric Powder: 1/2 tsp
- Red chilli powder: 1 tsp
- Coriander-cumin powder: 1 tsp
- Celery: 1/2 tsp
- White sesame: 1 tbsp
- Lemon juice: 1 tbsp
- Sugar/Jaggery: 1 tsp (as per taste)
- Oil: 1 tbsp (for moyan)
- Baking soda: a pinch
- Salt: as per taste
- Coriander: finely chopped

- Oil: 1 to 2 teaspoons
- Mustard: 1 tsp
- White sesame: 1 tbsp
- Asafoetida: a pinch
- Curry leaves: 8-10
- Dry red chilli: 1-2
method of making
prepare the dough
In a large vessel, mix wheat flour, gram flour, semolina, grated bottle gourd and spices (turmeric, red chilli, coriander-cumin powder, celery, sesame, salt, sugar). Now add ginger-chilli paste, lemon juice, 1 teaspoon oil and a pinch of baking soda. Knead soft dough with the help of bottle gourd water.
Shape and Steam
Apply some oil on your hands and make long rolls of dough called muthiyas. Grease the plate of a steamer or dhokla stand with oil and place the rolls on it. Close the lid and steam on medium-high flame for 15 to 20 minutes. Check by inserting a knife, if the knife comes out clean then the muthia is cooked.

Let the steamed rolls cool completely. After cooling, cut them into round pieces of half inch thickness.

Heat only 1-2 spoons of oil in a pan. Add mustard seeds, asafoetida, curry leaves, dry red chilli and white sesame seeds. When the sesame seeds start crackling, add the chopped muthias to the pan and cook on low flame for 3-4 minutes until they become light golden and crispy.
