Lifestyle Desk – During fasting days, most of the houses prepare Sabudana Khichdi, Sabudana Vada or other fruit items. But if you are bored of eating the same type of food and want to try something new during the fast, then Farali Handvo can be a good option. It is lightly crisp from outside and soft from inside. It is prepared from sama rice and sago and adding potatoes, carrots and roasted peanuts to it improves both its taste and texture. So, you must try it during this Navratri fast.
Material
Sama rice-1 cup
Sabudana-½ cup
Potato-1 boiled
Carrot-1 small finely chopped
Roasted peanuts-2-3 tbsp
Green chilli-1-2 finely chopped
Ginger – a little
Cumin – 1 teaspoon
White sesame seeds – 1-2 teaspoons
Rock salt – as per taste
Lemon juice – a little
water as per need
Some oil or ghee for baking
Method
- First of all, clean and wash Sama rice and sago separately. Soak them in enough water for a few hours.
- After this, drain the water and put both in the mixer and prepare a coarse or slightly fine batter by adding some water.
- Do not keep the batter too thin. Mash boiled potatoes well and mix them. After this, add chopped carrots, green chillies, ginger, roasted and lightly crushed peanuts, rock salt and some lemon juice and mix well.
- If you have time, let the batter rest for a while so that the ingredients mix properly and the handvo gets a better texture.
- Now take a heavy bottomed nonstick or iron pan. Heat some oil or ghee in it. Add cumin and white sesame seeds to it. When the sesame seeds start crackling lightly, pour the prepared batter into the pan and spread it in a round shape.
- Do not keep the handvo too thick, otherwise it may take longer to cook from inside. Now cover it and cook it on low flame. When the bottom surface starts becoming golden and crisp, turn it carefully.
- Cook well from the other side also on low flame. After it becomes slightly crisp on both sides, take it out in a plate and cut it into pieces.
- Serve Sarvafarali Handvo with green chutney. The taste of handvo gets enhanced with green chutney. For this, you can prepare chutney by grinding coriander, green chillies, some roasted peanuts, lemon juice and rock salt. Serve hot, crunchy Farali Handvo with this chutney.
Keep these things in mind
To make the handvo crispy, add the batter after heating the pan thoroughly, but keep the flame low while baking. On high flame, the outer layer may get cooked quickly, while the inner part may remain raw. Do not be hasty while turning the handvo and turn it only after it is set well on one side.
This Navratri or any fast, if you feel like eating something different from Sabudana Khichdi, then you can definitely try this Farali Handvo made from Sama rice. The combination of crispy tadka, peanut flavor and green chutney makes it a delicious and different fruit dish.
