method of making
Step 1: First of all, filter the water of soaked moong dal thoroughly. Now put it in the mixer jar and grind it coarsely.

Step 2: After this, heat 1 teaspoon oil in a pan. Add cumin and asafoetida in it. When cumin seeds start crackling, add ginger-garlic paste and chopped green chillies and fry for a few seconds. Now add finely chopped onion and cook till it turns golden.

Step 3: Now add ground moong dal, turmeric, coriander powder, red chilli, garam masala and salt in the pan and mix well. Fry the dal on low flame for 4 to 5 minutes so that its rawness goes away. Finally add dry mango powder and green coriander and turn off the gas. Let the stuffing cool completely.

Step 4: After this, add wheat flour, salt, celery and a little oil in a big vessel and mix well. Now add water little by little and knead a soft and smooth dough. Cover the dough and let it set for 10-15 minutes.

Step 5: Make equal sized balls of dough. Roll out a ball a little and place a tablespoon of prepared moong dal stuffing in it. Now close it from all sides and make a round ball. With the help of dry flour, roll the paratha gently.

Step 6: Heat the pan and put the rolled paratha on it. Once cooked on one side, turn it over and apply ghee or oil on both sides and cook on medium flame until golden and crisp.
