Ingredients required to make Soya Paratha
Soya Chunks: 1 cup (bafela and peasela)
Wheat flour (or multigrain flour): 1 cup
Minced Samaar Onions: 1 small
green pepper: 1-2 (जीना समारेला)
Peach-Garlic Paste: 1 teaspoon
Spice: Half teaspoon turmeric, half teaspoon red chili powder, half teaspoon garam masala and half teaspoon ajwain.

Salt: as per taste
oil or ghee: For baking parathas (very small quantity)
How to make Soya Paratha
First of all, soak soya chunks in hot water with some salt and soak for 10 minutes. When it becomes soft, squeeze out all the water from it. Now put it in the mixer and grind it to a crisp (like kheema). Heat only half teaspoon oil in a pan. Add celery, peach-garlic paste and green chillies and mix well. Now add chopped onion and cook till it turns light pink. Then add ground soya, turmeric, red chilli, hot spices and salt. Stir everything for 3-4 minutes and finally add coriander and turn off the gas.
Your high-protein stuffing is ready. Add some salt and water to wheat flour and make a soft dough. Now take a lump of dough, roll it a little and fill 2 spoons of soya stuffing in the middle. Close it from all sides and make it like a bundle and with the help of dry flour, gently roll out round parathas. After this, roast it on a pan with very little oil or ghee till it becomes golden brown from both the sides.
