Material

  • Ragi flour: 1 cup
  • Rice flour: ¼ cup
  • Wheat flour or maida: 2 teaspoons (for binding)
  • Oil: 2 tsp and as required for frying
  • Celery: ½ tsp
  • White sesame: 1 tsp
  • Salt: as per taste
  • Masala for coating: chaat masala, red chili powder, and dry mango powder

method of making

step 1

First of all, add ragi flour, rice flour, wheat flour, celery, sesame and salt in a big vessel and mix well. Now add 2 spoons of lukewarm oil to it and mix with hands. After this, knead a stiff dough by adding lukewarm water little by little. Then keep the dough covered for 10 minutes.

Step 2
Now make small balls of the dough. Take a ball and roll it as thin as possible with the help of dry flour. Keep in mind, the thinner the chips are rolled, the crispier they will become. After rolling, make small holes all over the roti with the help of a fork so that the chips do not swell while frying. Now cut it into desired shape with the help of a knife or pizza cutter.

Step 3
Heat oil in pan. Keep the flame medium and slowly drop the chips into the oil. Fry them by turning them again and again until they become crispy. Ragi is dark in colour, so take care that it does not burn. When it is fried, take it out and then let it cool. Chill and enjoy.
