How to make Samak Rice Barfi

Process to make barfi:

– First of all, wash the samak rice thoroughly and soak it in water for 15-20 minutes. Then drain the water and grind the rice coarsely in a mixer. Take care not to make a paste of the rice, just grind it lightly.

Now heat 1 tablespoon desi ghee in a deep bottom pan. Add ground samak rice to it and fry it on low flame for 4-5 minutes. When a slight aroma starts coming from the rice, add milk to it.

– After adding milk, cook the samak rice on low flame while stirring continuously. When the rice starts thickening, add mawa to it and mix well.

Now add powdered sugar to it and keep stirring continuously. After adding sugar, the mixture will become a little thin, cook it on low flame until it thickens again and starts leaving the pan.

Now add cardamom powder, chopped almonds, cashews and pistachios. If there is saffron, add it also. Mix everything well and cook for 2-3 minutes.

– Grease a plate or tray with a little ghee. Now add the barfi mixture to it and spread it evenly with a spoon. Finally add chopped pistachios and almonds on top.

– Let the barfi set by placing it under the fan in the room first. When the mixture freezes well, cut it into desired shapes with a knife and keep it in the refrigerator.

– Your samak rice barfi is ready. Offer it to Lord Shiva in the evening.
