Ways to prevent cut potatoes from turning black
Keep cut potatoes in cold water
The simplest way to prevent cut potatoes from turning black is to immediately immerse them in cold water. Fill a large vessel with enough water to completely submerge the potatoes. Through this process, the contact of potatoes with air is reduced and their color remains white for a long time.
Use lemon or vinegar
If you want to keep potatoes fresh for a longer period, add one teaspoon of lemon juice or white vinegar to cold water. The mild acid present in lemon and vinegar helps in slowing down the process of oxidation.
Salt water is also effective
If lemon or vinegar is not available at home, use salt. Dissolve half a teaspoon of salt in water and add chopped potatoes to it. This may slow down the process of changing the color of the potato. It would be better to wash them with clean water before cooking.

If you have to cut potatoes at night to avoid the morning rush, then keep them in the refrigerator in an airtight container filled with water. Keeping potatoes open in the refrigerator without water can cause them to dry out and change their color.
