Make Himalayan Thukpa at home: Simple recipe and ingredients

Simple method of making Himalayan Thukpa

If you want to enjoy recipes from different countries but are unable to do so due to expensive or difficult-to-find ingredients, then this recipe is a great option for you.

Food blogger Rinchen Wangdi Bhutia has shared the recipe of a Himalayan-style veg thukpa that you can make with ingredients you have at home. He told that no special machine or expensive material is required to make it. He wrote, “Restaurant style Himalayan Thukpa in a cooker? No fancy ingredients, no machines… just homemade Himalayan flavours.”

For Homemade Eggless Noodles: 1 cup maida or flour, ¼ teaspoon turmeric, a pinch of salt, 1 teaspoon oil and water as required.

For Thukpa: 2 tsp oil, 1 green chilli, 5-6 garlic cloves, 1 onion, 2 tomato puree, ½ tsp turmeric, 1 tsp cumin powder, salt to taste, 1 small potato, 1 carrot, ½ cup soaked black gram, ½ cup soaked green peas, water as required and 1-2 tsp Timur chilli paste (optional).

Making Eggless Noodles at Home

One specialty of this recipe is that the noodles are also made at home. For this you will need maida or flour, turmeric, salt, oil and water. Take 1 cup of maida or flour in a bowl, add turmeric, some salt and 1 teaspoon of oil in it. Now add water little by little and knead a soft dough and cover it and keep it for 15-20 minutes.

After this, divide the dough into two parts and roll it like a thin roti. Sprinkle some flour on top, fold it and cut thin strips with a knife. In this way your homemade eggless noodles will be ready.

Preparing Thukpa Masala

To make Thukpa, heat 2 teaspoons of oil in a pressure cooker. Add chopped green chillies, crushed garlic and onion and fry. Cook until onion becomes soft. Then add tomato puree, turmeric, cumin powder and salt as per taste. Cook the masala until oil starts separating. Now add chopped potatoes, carrots, soaked black gram and green peas and mix well.

Add water as required to the vegetables and close the lid of the cooker. Cook the vegetables until soft. After the vegetables are cooked, open the cooker and add some more water as required. Keep in mind that the consistency of thukpa should be slightly soupy. Now add home made noodles in it and close the cooker and cook till 1 whistle.


Add special Himalayan flavor

After opening the cooker, add Timur chilli paste. This is optional, but it gives the thukpa a distinctive Himalayan flavor and mild spicy aroma. Now your hot Himalayan Veg Thukpa with Homemade Eggless Noodles is ready. Serve it hot and enjoy the taste of Himalayas at home.
