2 tbsp boiled potatoes (for binding),
1 tablespoon arrowroot flour,
Rock salt as per taste,
1 tsp ghee,
200 grams paneer (cut into cubes),
1 cup tomato puree,
2 tbsp cashew paste,
1 tablespoon ginger-chilli paste,
1 tbsp fresh cream,
1 tablespoon butter or ghee,
Rock salt as per taste,
1 tsp sugar (optional),
1/2 tsp roasted cumin powder,
1/2 cup makhana crumble,
fresh coriander,
Cream Swirl.
Method of preparation
– First of all grind the roasted makhana coarsely in the mixer. Prepare a smooth dough by mixing boiled potatoes, arrowroot flour, rock salt and ghee in it. Press this mixture well into the tart mold and give it a uniform shape.
Then bake it at 180°C for 10 to 12 minutes or until it becomes crispy. If you don't have an oven, you can cook it in a pan on low flame by turning it upside down.
Now heat ghee and butter in a pan, then add ginger-chilli paste and fry. Add tomato puree to it and cook until oil separates from tomatoes.
Now add cashew paste, rock salt, roasted cumin powder and some sugar and mix well. Finally add fresh cream and paneer cubes and cook the gravy on low flame, so that its texture remains rich and smooth.
Now fill the prepared crispy tart shells with hot Makhaniya Paneer filling. Garnish with makhana crumble, cream swirl and coriander and serve.
