  • Boiled potatoes – 3-4
  • Carrot – 1 (grated)
  • Peas – 1/2 cup (boiled)
  • Beans – 1/4 cup (finely chopped)
  • Bread Crumbs – 1 cup
  • Green chilli – 1-2 (finely chopped)
  • Ginger – 1 small piece (grated)
  • Coriander leaves – 2 tbsp (chopped)
  • Red chilli powder – 1/2 tsp
  • Garam masala – 1/2 tsp
  • Salt – as per taste
  • Oil – for shallow frying

How to make Vegetable Cutlet

Flavorful vegetable cutlets are also nutritious. To prepare these, first mash the boiled potatoes in a big bowl. Add carrots, peas, beans, green chillies, ginger and coriander leaves and mix well. Now add salt, red chili powder and garam masala to it and prepare the mixture well.

Divide the prepared mixture into small portions and make cutlets in round or oval shape as per your choice. This makes the cutlets look attractive and cooks evenly.

Now roll each cutlet in bread crumbs, so that its outer layer becomes crispy. If you wish, you can improve the coating by applying a little water or cornflour slurry.

Heat some oil in a pan and shallow fry the cutlets on medium flame. Cook them until they become golden brown and crispy on both sides. Keep in mind that do not fry on too high a flame, otherwise the cutlets may burn from outside and remain raw from inside.

Serve hot vegetable cutlets with green chutney or tomato sauce. Its taste can be further enhanced by adding chaat masala on top.
