Tezzbuzz Desk- Misal Pav of Maharashtra is a famous street food liked all over the country. The combination of spicy curry, spicy usal, crisp farsan, finely chopped onion and sour taste of lemon makes it very special. If you also like market-like misal pav, it can be easily prepared at home. The special thing is that the materials used in it are easily available. Let us know the complete recipe of making Misal Pav for 5-6 people.
To prepare misal pav, first of all one has to prepare its vatan i.e. masala paste. For this, heat 1 tablespoon oil in a pan. Add 2 medium chopped onions, 2 medium chopped tomatoes, half cup grated dry coconut, one and a half tablespoon chopped ginger, 10 large garlic cloves, 2 green chillies, a handful of coriander stalks, 1 tablespoon sesame seeds and 1 tablespoon poppy seeds and fry well. Cook until the ingredients turn light brown. After this, let the mixture cool completely and make a smooth paste by adding some water as per requirement.
Now prepare the spicy gravy of misal. For this, heat 2 tablespoons oil in a pan. When the oil is hot, add 1 teaspoon cumin and 1 teaspoon mustard. After this, add prepared vatan and cook well for a few minutes. Now add 2 tbsp red chilli powder, half tsp turmeric powder, half tbsp coriander powder, 1 tbsp Goda masala, 1 tsp garam masala and 3 tsp salt. Mix all the spices well with the vatan and cook.
After this add 1½ cups of sprouted matki and mix well with the spices. Now add some jaggery and about 5-6 cups of water and mix everything well. Cook it on low flame until the gravy becomes desired thickness and tasty. The quantity of water can be increased or decreased as per need.
To serve misal pav, pour prepared misal into a bowl. Add plenty of farsan and finely chopped onion over it. Place lemon slices along with it and serve with hot pav. If you want, you can also serve the pav after lightly toasting it, so that it absorbs the misal gravy well.
To improve the taste and texture of misal pav, it is better to sprout the matki a day in advance. At the same time, while preparing vatan, frying the rest of the ingredients including dry coconut thoroughly improves its taste and aroma. If you like more spicy taste then the quantity of red chilli can be increased, whereas people who like mild taste can reduce its quantity. Similarly, the gravy can be kept thick or thin as per your choice.
