1 cup semolina, 1.5 cups sugar, 1/2 cup ghee, 1 tsp kewra water, 1 tsp cardamom powder, 8-10 almonds, 8-10 cashews, 1-2 tbsp coconut
How to make caramelized semolina pudding?
Step 1: To make caramelized semolina pudding, first turn on the gas stove and place a pan on it. Once the pan is hot, add the semolina and fry it thoroughly. Fry the semolina until it turns red. Fry the semolina for five to six minutes. Once it’s done, transfer it to a deep vessel. Now, add two glasses of water or milk to the pan and let it soak for some time.
Step 2: Now, add ghee to the same pan and roast all the dry fruits thoroughly. Once the dry fruits are roasted, transfer them to a bowl. Add a little more ghee to the pan and then add sugar. Stir the sugar thoroughly over medium heat. Cook until the sugar caramelizes. When the sugar begins to brown, add cardamom powder and kewra water, and mix well. You will notice that the sugar has melted and turned completely brown.
Step 3: Reduce the heat to medium, add the semolina and mix well. Continue stirring until the mixture thickens slightly. Once thickened, add the dried fruits and mix well again.
