The true flavor of tikkis lies in their crispiness and the balance of spices. The perfect potatoes, the right proportion of spices, and a golden roast over low heat make them special. If you’re looking to make a spicy and tasty snack for your family, try this easy recipe.
Ingredients for making Aloo Tikki
- 5 medium sized boiled potatoes
- 2 tablespoons cornflour or arrowroot
- 1 teaspoon red chili powder
- 1 teaspoon roasted cumin powder
- 1/2 teaspoon garam masala
- 1 teaspoon chaat masala
- 2 finely chopped green chillies
- 2 tablespoons finely chopped coriander leaves
- Salt to taste
- Oil or ghee for frying or shallow frying
Method of making Aloo Tikki
Prepare the potatoes:
Once the boiled potatoes have cooled completely, mash them well. Ensure there is no water in the potatoes, so the tikkis will be crispy.
Add
the cornflour, red chili, roasted cumin, garam masala, chaat masala, salt, green chilies, and coriander leaves to the mashed potatoes and mix well. If the mixture seems too soft, add a little more cornflour.
Shape the
mixture into tikkis. Form evenly sized round or slightly flattened tikkis. If desired, you can also make stuffed tikkis by filling the center with a little paneer or boiled peas.
Bake until golden.
Heat a non-stick pan and lightly oil it. Bake the tikkis over medium heat until golden and crisp on both sides. Baking on high heat can cause the tikkis to burn on the outside and not cook thoroughly on the inside.
Serve hot potato tikkis with green coriander chutney, sweet tamarind chutney, yogurt, finely chopped onions, and sev. If desired, you can also serve them as a chaat.
