for batter

  • 1 cup semolina (rava)
  • 1 cup curd (fresh or light sour)
  • 1/2 cup water, 1 tbsp oil
  • 1 tsp ginger-green chilli paste
  • salt as per taste
  • 1 tsp eno (or 1/2 tsp baking soda)

for tempering

  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tbsp white sesame seeds
  • 8-10 curry leaves
  • 2 green chillies (cut lengthwise)
  • 1 pinch asafoetida
  • 1 tsp sugar
  • 1/2 cup water.

method of making

step 1: Mix semolina, curd and salt well in a large vessel. Make a thick batter by adding water little by little. Cover this solution and keep it for 15-20 minutes so that the semolina absorbs the water and swells well.

Step 2: Pour 2 glasses of water in a steamer or deep pan and bring it to boil on medium flame. Grease the Dhokla plate or any sided plate thoroughly with some oil.

Step 3: Stir the semolina solution after 15 minutes. If the solution seems too thick then add 1-2 teaspoons of water. Now add ginger-green chilli paste and 1 tablespoon oil and mix.

Step 4: Just before steaming, add Eno to the solution and sprinkle 1 tsp water on top. Beat it gently in one direction for 5-10 seconds. The batter will become very light and foamy.

Step 5: Immediately pour this batter into the greased plate and tap it lightly. Place the plate in the steamer, cover and cook on high flame for 12-15 minutes. Check by inserting a toothpick, if the toothpick comes out clean then the Dhokla is cooked. Take it out and let it cool for 5 minutes.

Step 6: Heat oil in pan. Add mustard seeds, asafoetida, curry leaves, sesame seeds and green chillies and temper it. Now add 1/2 cup water and sugar in it, let it boil and turn off the gas. Then enjoy it.
