Material
for batter
- Semolina (Rava) – 1 cup
- Sabudana – 1/2 cup
- Curd – 1/2 cup (light sour)
- Water – as required
- Eno or baking soda – 1/2 tsp
- Salt – as per taste.
For seasoning/flavor
- Mustard – 1/2 tsp
- Curry leaves – 8-10
- Finely chopped green chilli – 1
- Finely chopped coriander – 2 teaspoons
- Oil – 1 tbsp.
method of making
step 1: Wash the sago and soak it in some water for about 2 to 3 hours so that it swells and becomes soft. After this, grind the soaked sago coarsely with some water in the mixer.
Step 2: Mix semolina, ground sago and curd in a large vessel. Prepare a thick batter by adding water little by little. Add salt, beat well and keep covered for 15-20 minutes so that the semolina absorbs the water.
Step 3: Heat 1 teaspoon oil in a small pan. Add mustard seeds, curry leaves and green chillies to it. Add this tempering and chopped green coriander to the prepared batter and stir well.
Step 4: Keep water in idli steamer to heat. Grease the mini idli mold with a little oil. Add Eno or baking soda to the batter and add 1 spoon of water on top and mix gently in one direction.
Step 5: With the help of a spoon, fill the batter little by little in the chambers of the mini idli mould. Place it in a hot steamer and steam it on medium flame for 8 to 10 minutes.
Step 6: Try inserting a toothpick, if it comes out clean then the idli is ready. When they cool down a bit, take out the mini idlis with the help of a knife or spoon. Then enjoy it.
