Semolina (Rava): 1 cup
Gram flour: 1/2 cup
Water: 2.5 cups
Finely chopped onion: 1 (medium)
Finely chopped green chillies: 2
Ginger-garlic paste: 1 tsp
Grated carrot and capsicum: 1/2 cup
Coriander: finely chopped
Spices: 1/2 tsp cumin, 1/2 tsp mustard, pinch of asafoetida, 1/2 tsp turmeric, 1/2 tsp red chilli powder, 1/2 tsp garam masala and 1 tsp dry mango/lemon juice.
Salt: as per taste
Oil: for frying
method of making
Step 1

Add semolina, gram flour, salt and all the dry spices in a large vessel. Now add 2.5 cups of water to it and prepare a thin solution so that there are no lumps in it.

Step 2
Heat 1 teaspoon oil in a pan. Add cumin, mustard, asafoetida, green chilli and ginger-garlic paste and fry. Now add chopped vegetables (onion, carrot, capsicum) and stir for 1 minute. After this, add the prepared gram flour-semolina solution into it.

Step 3
Keep the flame low and keep stirring the mixture continuously. Within 4-5 minutes, the gram flour and semolina will absorb all the water and start setting like a thick dough. Finally add green coriander and turn off the gas.

Step 4
Grease a plate or tray with oil. Spread the hot mixture in the plate and set it evenly. Let it cool for 10 minutes, then cut into desired shapes.

Step 5
Heat some oil in a pan and fry the cutlets on medium flame until they become golden and crispy from both sides. Then serve it with chutney and sauce.
