The Mediterranean Diet Recipe I Bring to Every Summer Cookout
Who says potluck dishes can’t be both healthy and delicious? This Mediterranean-inspired salad proves they can.

There’s something about summer cookout season that just hits differently: the heat, the lawn chairs and spending an afternoon with people you love. Then there’s the food. From grilled favorites and creamy pasta salads to chips and cold drinks, it’s all part of the tradition.
As a dietitian, though, I also like to show up with something that reflects the way I genuinely enjoy eating day to day. For me, that means leaning into the Mediterranean diet—a pattern of eating centered around colorful vegetables, whole grains, legumes, olive oil, herbs and spices that’s linked to a range of health benefits, including better heart and cognitive health.
So, when it’s my turn to bring a dish, I turn to a personal favorite: a No-Cook Chickpea, Beet & Quinoa Salad. The only downside? I never come home with leftovers. Here’s why I love this recipe.
It’s Nourishing
The chickpeas, quinoa and vegetables provide 4 grams of fiber per ¾-cup serving, helping support healthy digestion, satiety and metabolic health. The chickpeas and quinoa also contribute plant-based protein, which digests more slowly and can help keep you feeling fuller for longer.
There’s an impressive mix of nutrients here, too. Beets add natural sweetness along with betalains, pigments with antioxidant and anti-inflammatory properties. Chickpeas and greens supply folate, a B vitamin your body needs make and maintain cells Finally, the extra-virgin olive oil—a hallmark of the Mediterranean diet—provides heart-healthy unsaturated fats and polyphenols.
Of course, this salad isn’t a magic bullet—no single dish is—but it’s a wholesome addition to a cookout spread that can sometimes feel a little heavy.
It Requires (Almost) Zero Cooking
Honestly, this is one of the biggest reasons the recipe makes my summer rotation. When it’s hot outside and the oven feels like the enemy, I don’t want to turn on a single burner. This salad comes together with a simple lemon-and-olive oil dressing and one mixing bowl.
I rely on a few shortcuts to make it even easier. Precooked beets and canned chickpeas keep prep to a minimum, and I’ll often cook a batch of quinoa earlier in the week (OK, there’s a tiny bit of cooking) so it’s ready to go. From there, it’s mostly chopping and stirring. This is the kind of simplicity I want in the summer.

Cookout food can add up quickly, especially when you’re feeding a crowd. What I appreciate about this salad is that many of the ingredients are pantry staples that won’t break the bank. Canned chickpeas and dry quinoa are budget-friendly, shelf-stable and easy to stock up on, while beets, celery and scallions tend to be relatively low cost, particularly during the summer months.
Because the recipe makes eight servings, it goes a long way. When I’m asked to bring a dish for a group, I like knowing I can bring something nourishing without spending a fortune.
It’s Low in Sodium & Free of Added Sugars
Many cookout sides quietly rack up sodium and added sugars thanks to bottled dressings, seasoning packets and sweetened condiments. This salad sidesteps all of that. The homemade lemon and olive oil dressing and no-salt-added chickpeas keep each serving at just 166 milligrams of sodium—far less than you’ll find in many packaged side dishes.
And while the beets add a touch of sweetness, there’s no added sugar in sight.
It Travels & Holds Up Well
Anyone who’s carried a delicate green salad to a party knows the disappointment of arriving with a wilted, soggy mess. This salad avoids that problem. Built around sturdy ingredients like chickpeas, quinoa and beets, it holds up beautifully, and the flavors actually have time to deepen as it sits.
This makes it a dream for potlucks and picnics. I can make it ahead of time, transport it in a single container and serve it whenever we’re ready to eat. It tastes just as good cold as it does at room temperature, so I never have to worry about keeping it warm.
