Material
to prepare the dough
Flour: 2 cups
Desi Ghee: 4 tbsp
Water: to knead the dough
For stuffing:
Mawa (Khoya): 200 grams
Powdered sugar or sugar: 1 cup
Semolina: 2 tbsp (lightly roasted)
Chopped nuts: 2 tbsp (cashew nuts, almonds, pistachios)
Raisins: 1 tbsp
Cardamom Powder: 1 tsp
For frying: Ghee or oil
method of making

First of all, sift flour in a big vessel. Now add 4 spoons of melted ghee in it and mix it well with flour. When the flour starts clumping in your fist, then understand that Moyan is right. Now knead a stiff dough by adding lukewarm water little by little. Cover the dough with a wet cloth and let it set for 20 minutes.
Step 2
Fry the mawa in a pan on low flame until it turns light pink. Once the mawa is roasted, take it out in a vessel and let it cool. When the mawa cools down completely, add roasted semolina, powdered sugar, chopped nuts, raisins and cardamom powder and mix well.
Step 3
Make small balls of dough and roll them thin like puris. Now place this rolled puri on the gujiya mould. Fill 1-2 spoons of mawa stuffing in the middle. Apply a little water on the edge with your finger so that the Gujiya does not open while frying. Press the mold tightly and remove excess dough.
Step 4
Heat ghee or oil in a pan on medium flame. When the oil becomes slightly hot, add Gujiyas one by one. Always fry the Gujiya on low flame, this will make it crispy and crispy from outside. When the Gujiya becomes golden from both the sides, take it out on a paper towel. Let it cool and then enjoy.
