Ingredients for making Bhapa Doi
- Thick curd – 2 cups
- Condensed milk- 1 cup
- Cardamom essence – 5 drops
First drain the curd water
To make the texture of Bhapa Doi creamy, it is important to remove excess water from the curd. For this, put curd in a clean cotton or muslin cloth. Tie the cloth and hang it for a few hours, so that the water from the curd drains out properly. If the curd is already quite thick, it may take less time to steep.
Prepare a mixture of curd and condensed milk
Take thick curd in a big bowl and add condensed milk to it. Beat both the things well, so that there are no lumps in the mixture. Now add cardamom essence or cardamom powder and mix well. Keep in mind that the mixture should not be too thin.
How to make steam without oven
Pour the prepared mixture into a heatproof bowl or steel bowl. Now pour some water in a big vessel and place the stand inside it. Place the bowl containing Bhapa Doi on the stand. Cover the vessel and steam it on low flame for about 20 to 30 minutes. The steaming time may be slightly more or less depending on the size of the vessel and the quantity of the mixture.
After cooling, keep in the refrigerator
Once the Bhapa Doi is well set, turn off the gas and let it cool down to room temperature. After this keep it in the refrigerator for a few hours. After cooling, its texture becomes even creamier and tastier. While serving, Bhapa Doi can be garnished with pistachios, almonds or saffron.
