First of all, soak Sama rice and sago separately or together in water for some time. When they become completely soft, put them in the mixer jar.

Now add some ginger and water as per requirement and grind it. Keep in mind that the batter should not be too thin. It would be better to keep it a little thick and smooth.

Take out the prepared batter in a big vessel.

Now add bottle gourd and cheese

Add grated bottle gourd and cheese to the batter. After this add finely chopped green chillies and fresh coriander.

According to the fast, add rock salt to it and mix everything well. Keep in mind that there may be excess water in bottle gourd, hence add water as per requirement only after seeing the consistency of the batter.

How to cook paniyaram in pan

Now heat the paniyaram pan on low to medium flame. Apply a little ghee in every corner of the pan.

After this, with the help of a spoon, fill the prepared batter in all the holes of the pan. Try to use approximately equal amount of batter in each dish.

Now cover the pan and let it cook for a few minutes. When the Paniyaram starts turning golden from the bottom and the edges start appearing slightly crispy, it is time to flip them.

Make it golden and crispy on both sides

Carefully turn the Paniyaram with the help of a spoon or a wooden stick. If needed, you can add a little more ghee.

Now cook well from the other side also. When both sides become golden brown and slightly crispy, take them out from the pan.

Similarly, prepare all the Paniyarams with the remaining batter.

To enhance the taste of Paniyaram, you can also make instant fruit chutney with it.

For this, add roasted peanuts, coconut, green chillies and green coriander in the mixer. Grind it by adding some water as per requirement.
