Step 1: Mix spices in gram flour

First of all, sift gram flour in a vessel. Add salt, turmeric, celery and asafoetida in it. If you want, you can also add some sweet soda to make the phulkis lighter. Now prepare a thick and lump-free solution by adding water little by little.

After this, beat the batter well for about 4-5 minutes, so that it becomes light. Then add finely chopped green chillies and green coriander to it.

Step 2: Prepare soft and spongy phulkis

Now you have two options to cook phulkis.

  • Frying in oil: Add small amounts of batter in hot oil and make small dumplings. Fry them on medium flame till they become light golden and cooked from inside.

  • By steaming: If you want a less oil option, pour the batter into a greased idli mold or a suitable steamer and cook thoroughly. Cooking time may vary depending on size and appliance.

Keep in mind that the phulikas should not remain raw from inside. There is no need to brown them too darkly.

Step 3: Soak the phulikas in water

After the phulkis are ready, put them in lukewarm water for a few minutes. This will soften them and absorb moisture. When the puffs become soft, press them gently to remove excess water.

By this step the texture of phulkis becomes soft and they are able to absorb the flavor of curd well.

Step 4: Prepare Creamy Curd

Take fresh curd in a vessel and beat it well. Add salt to it as per taste. If you like light sweet-sour taste, you can also add 1–2 teaspoons of powdered sugar.

If the curd seems too thick, add some cold water and adjust its consistency as per your choice.

Step 5: Pour curd on phulikas

Now place the water-squeezed phulikas in a serving bowl. Pour plenty of whipped curd over them, so that all the phulikas are covered well.

After this, sprinkle roasted cumin powder, red chili powder and finely chopped green coriander on top. If you want, you can also add some sweet chutney or green chutney to enhance the taste.

Step 6: Enhance the taste with special seasoning

To give a special taste to curd pakoda, heat some ghee or oil in a small pan. Add mustard seeds, asafoetida, curry leaves and whole red chillies in it. When the spices start crackling, pour the tempering over the curd dumplings.
