- Mishri, Desi Khand or powdered sugar – 3/4 cup
- Flour- 3 to 4 cups
- Desi Ghee- 3 to 4 tablespoons
- Makhana, cashew nuts, almonds and grated coconut – 1 cup
- Cardamom powder- 1 pinch
Prepare Panjiri for Janmashtami like this
roast nuts
First of all, put desi ghee in a pan and heat it. Add chopped makhana, cashew nuts, almonds and coconut and fry well on low to medium flame. When the dry fruits emit a slight aroma and their color turns slightly golden, take them out of the pan and keep them aside.
fry the flour thoroughly
Now add ghee as per requirement in the same pan, add flour and fry while stirring continuously. It would be better to cook the flour on low flame, so that it does not burn from below. When the color of the flour becomes light brown and fragrant, then understand that it has been roasted well.
Mix sugar and cardamom
Now add sugar candy, desi khand or powdered sugar to the roasted flour and mix well. After this add a pinch of cardamom powder and mix everything well.
Add roasted nuts at the end
Now add pre-roasted makhana, cashew nuts, almonds and coconut to the panjiri. After mixing all the ingredients well, turn off the gas. Let the Panjiri cool for some time.
Do not make this mistake while making Panjiri
The taste of Panjiri largely depends on how the flour has been roasted. Do not leave the flour raw or fry it too much. Cooking on high flame for too long can cause the flour to burn and spoil the taste of the Panjiri. It would be best to fry the flour only until it becomes light brown and aromatic. Similarly, keep the quantity of sugar or sugar as per taste. Adding too much sugar can make Panjiri excessively sweet.
