Material
- Semolina (rava): 1 cup
- Gram flour: 1/2 cup
- Water: 2.5 cups
- Finely chopped onion: 1 (medium)
- Finely chopped green chillies: 2
- Ginger-garlic paste: 1 tsp
- Grated carrots and capsicum: 1/2 cup
- Coriander leaves: finely chopped
- Spices: 1/2 tsp cumin seeds, 1/2 tsp mustard seeds, a pinch of asafoetida, 1/2 tsp turmeric, 1/2 tsp red chilli powder, 1/2 tsp garam masala and 1 tsp dry mango powder/lemon juice.
- Salt: to taste
- Oil: for frying
Method of preparation
step 1
Combine the semolina, gram flour, salt, and all the dry spices in a large bowl. Add 2.5 cups of water and mix until a thin, lump-free batter forms.
Step 2:
Heat 1 teaspoon of oil in a pan. Add cumin seeds, mustard seeds, asafoetida, green chilies, and ginger-garlic paste and fry. Add the chopped vegetables (onion, carrot, and bell pepper) and stir for 1 minute. Then, pour in the prepared gram flour-semolina mixture.
Step 3:
Reduce the heat to low and stir the mixture constantly. Within 4-5 minutes, the gram flour and semolina will absorb all the water and begin to form a thick dough. Finally, stir in the coriander leaves and turn off the heat.
Step 4:
Grease a plate or tray with oil. Spread the hot mixture evenly on the plate and let it set. Let it cool for 10 minutes, then cut it into desired shapes.
Step 5:
Heat a little oil in a pan and fry the cutlets over medium heat until golden brown and crispy on both sides. Serve with chutney and sauce.
