One Prawn & Co started out as a hawker stall at Golden Mile Food Center in 2019, specializing in Penang-style prawn noodles.
Ang, a former Burnt Ends chef, had learnt the recipe from her Penang-born mother, Channel News Asia reported.
The business later moved to a standalone kopitiam in MacPherson, where it earned a Michelin Bib Gourmand in 2022. The recognition honors eateries serving delicious food at affordable prices.
In 2024, the eatery added pao fan (cooked rice in hot broth) and claypot rice to its menu, retaining its Michelin Bib Gourmand.
That July, Ang brought the One Prawn & Co name to a much fancier 82-seat restaurant at New Bahru, this time focusing on dry-aged seafood and dishes cooked over wood fire, AsiaOne reported.
Prices at this outlet were correspondingly higher.
The current menu features contemporary takes on Asian flavors while retaining nods to the brand’s prawn noodles.
For lunch, highlights include Prawn Bisque Ramen while the dinner menu offers dishes such as smoky prawn toast and flat rice noodle dish cooked directly over live charcoal.
